I have several low carb cookbooks, this is my favorite. Very informative in regards to nutrition. The recipes are great, some are time consuming but worth the time. Our favorite is the Eggplant Casserole, delicious. I would have liked to have seen more photographs though.

I wish I could give this book the full five stars. It is filled with great information about low-carbing, has some very wonderful recipes and is a welcome addition to my cookbook library.
My complaints, however, are that it is not terribly well-organized, is very skimpy on main course recipes - only 20 of them, and is overloaded with a hundred pages of dessert recipes that rely on way too much Splenda.
That said, there's an abundance of excellent low-carb tips and many inventive and delicious recipes using unusual ingredients. There are some great variations on spaghetti squash (yum!) and wonderful ways to prepare tons of low-carb vegetables.

Carb Wars contains a wealth of information and research on the subject of low carb cooking. It is beautifully photographed and obviously the creation of an artist who is passionate and well-informed about her subject matter. I look forward to trying every recipe in this book.

This is a wonderful cookbook! It is the best my wife and I have found for people who are trying to reduce carbs. We have tried a lot of the recipes, and found that they work and that the food tastes great (especially the desserts). Nearly every page has sidebars with interesting tips or other information that are fun to read. We have used other low-carb cookbooks (Atkins, Protein Power, and South Beach oriented) but we like this one best by a lot. There is also an interesting introduction describing the scientific basis for low-carb diets and comparing the popular ones.

Carb Wars offers a wonderful variety of foods to make from morning til night. Appetizers, salads, desserts - I really liked the baked goods best. And what I didn't expect was the wonderful historical account at the beginning - easy to understand, cited and just a nice overview. Buy it!
